Vacuum Mixing and Marinating

The Vakona ESK vacuum mixer processes meat, poultry, and fish under vacuum. It allows for mixing, massaging, marinating, and tumbling products in a single tank. As such, it is suitable for meat processing plants, processing workshops, and manufacturers of prepared meat products. In particular, it helps to distribute marinades, brines, spices, and other ingredients evenly around the products.

The system can process whole pieces or cut products. In addition, the tank performs a controlled movement during the cycle. Depending on the tool installed, the machine performs a gentle mix or a more vigorous massage. Therefore, the operator can adapt the process to the desired texture and the fragility of the raw materials.

How does the VAKONA ESK work?

First, the operator loads the products and ingredients into the tank. Then, the pump removes air to create the programmed vacuum level. The arm then moves the materials regularly throughout the duration of the cycle.

The vacuum facilitates contact between the products and the marinade. Thus, it reduces air pockets and improves the distribution of liquids. In addition, the variable speed allows the movement to be adapted to different recipes. The machine can alternate work, pause, and aeration phases to better control the process.

The ESK range combines vacuum processing with a direct cooling system. An exchanger placed around the tank helps to maintain a stable temperature during mixing or marinating. Thus, the machine limits the heating caused by the movement of the products.

This temperature control protects the texture of the raw materials. In addition, it promotes a more consistent process between different batches. Therefore, cooling is of particular interest for sensitive recipes and productions that require a controlled temperature.

Recipe control and monitoring

VAKONA offers a touch control system capable of storing up to 99 programs in the ESK range. The operator can thus record the parameters specific to each recipe. In particular, it can adjust the speed, duration, pauses, vacuum, and aeration phases.

In addition, the system can record process data according to HACCP principles. As a result, the company improves the monitoring of production and more easily reproduces the same settings. An automatic water separator also protects the vacuum circuit during operation.
